The metal is coated with metallic black porcelain enamel on the exterior, which makes it tough yet lightweight. The interior coating is a PFOA-free ceramic, which allows for easy cast iron cleaning but does not emit toxic vapors when heated.

At first, I was reluctant to consider an aluminum skillet because I love cast iron. However, one of my favorite things to make for my kids is pancakes. I like to show off by flipping the pancakes and using the skillet handle to brown them on both sides. I have to admit the weight of this skillet is much easier to handle than a cast iron camping skillet. Since the metal is fully covered by porcelain ceramic, you cannot even see it.

I have to say that I really like the Tramontina Gourmet Enameled Cast Iron 11-inch Grill Pan in Red with its lined ridges. It makes perfect searing marks when I cook Ahi tuna steaks that everyone expects to see. The ridges slightly lift any meat or fish that is placed in the pan to allow the juices to flow underneath while it is cooking. It is a simple but very effective design. The best part is the heat is well distributed so there are no hot spots. This cast iron grill pan is 11 inches (28 cm) square, which provides plenty of cooking area.

The red enameled ceramic coating on the bottom is very attractive. It has a smooth finish so it is safe to use on any cooktop that is gas, electric, or glass. It is made from cast iron; yet, it only weighs just over three lbs. (1.36 kg.).

This is the perfect pan to cook a nice beef brisket or pan-baked salmon. The finish is a beautifully gradated red on the outside of the pan and the lid it comes with has a stainless steel knob on top. The lid fits on other Tramontina products that have a 12-inch diameter like the matching cast iron skillet. Inside the lid and the pan, there is an off-white enamel ceramic surface that is smooth and easy to clean. The enamel used for the cooking surface is free from PFOA and PTFE.

The lid has a nice design that creates a self basting of the juices while something is cooking in the pan with the lid on it. The sturdy side handles are strong because they are integrated into the forged design. They are made with enough room to be able to easily carry the pan while wearing oven mitts. The Tramontina 6.5 Quart Round Enameled Cast Iron Dutch Oven in Red is my favorite size to use for slow cooking a nice stew. I put all the ingredients in the morning, bring it to a boil, and then let it simmer on low heat for many hours until the stewed meat is so tender it falls apart when touched by a fork. It is truly delicious. The nice heat retention quality and perfect distribution of the heat makes sure the food cooks evenly. When not making a stew, I use this Dutch oven to make apple cobbler for dessert.

On the outside, it is finished with a ceramic enamel in an attractive ombre red color. The inside is a smooth off-white surface that is easy to clean. The enamel used for the cooking surface is free of PFOA and PTFE. The lid that comes with the oven fits nicely and snugly.

This product is heirloom quality, so it should last for a very long time if you know how to maintain and care for cast iron. Be sure not to overheat the pan and never heat it when completely dry.
